Fatty acids are a class of organic compounds with aliphatic hydrocarbon chains containing a carboxyl group at one end. Fatty acids can be divided into saturated fatty acids and unsaturated fatty acids, and according to the position of the double bond, unsaturated fatty acids can be further divided into the ω-3, ω-6, ω-9 series and so on. Long-chain fatty acids consist of more than 12 carbon atoms, which contain the methyl group at one end and the carboxyl group at the other end of the hydrocarbon chain. The simultaneous detection and quantification of free fatty acids in a biological sample is relatively challenging. The presented data represents only 10% of the total fatty acids in biological samples, and low detection and high fluctuation over a wide dynamic range are often found.
